Hautvillers, Abbaye Saint-Pierre

Description

Abbey of St Peter Hautvillers (Abbaye Saint-Pierre d'Hautvillers) is a former Benedictine monastery in the Hautvillers village. The abbey was founded in 665 and remained active till the French Revolution 1789.

One of its monks, Dom Pérignon has invented the sparkling wine in the region of Champagne. The life and work of this famous procurator, who managed the assets of the monastic community from 1668 to 1715, is closely linked to the reputation of Champagne’s wine. Dom Pérignon took charge of the cellars and the production of wine. A talented man, passionate about his vines, did much to improve the production of champagne, such as blending wines from different grape varieties, storage in strong glass bottles and the use of cork instead of wooden bungs.

Visitors can see his tomb in the Abbey church.  The village of Hautvillers, including its ancient Abbey, was inscribed on the UNESCO World Heritage list in 2015 under the Champagne Hillsides, Houses and Cellars classification.

In Hautvillers there are 26 local Champagne producers !
